What did we learn during this segment? We learned from Barbara the challenges that face any company, but particularly food companies, in their "sophomore" year. The way things always tend to fall apart just when you think you're floating on air and made in the shade.
I can see Erica's second year being just as challenging if not more so. Her product is very "niche" - it's a high-end product that makes one meal and costs more than $5. I'm SURE it's delicious, but with those three factors listed above you've already narrowed your audience down significantly. With an industrial kitchen co-packing plant she might be able to produce enough to get it in stores nation-wide, but I can't see it being a product that goes global. And maybe that's not her plan, which is fine.
I'm glad Barbara came on board to help her through these rough waters. I'm salivating just looking at the flavors listed on their website, so next time I go to my grocery store I'll be looking for it.
